Scottish drop buns are similar to American pancakes, but thicker and sweeter. Queen Elizabeth ordered them to American President Eisenhower and his wife – and was so impressed that she wanted to share the recipe. We share with you a step-by-step method of making Scottish pancakes from the English Queen herself!
Queen Elizabeth prepared these cons herself. And now, after the death of the queen, the Today edition spoke about it – and this made the recipe famous all over the world.
That’s how it was. The Queen hosted President Eisenhower and his wife, Mamie, at their Scottish residence, Balmoral, in 1960. Knowing the Americans’ love of pancakes, they decided to serve the local analogue of pancakes – the Scottish drop bun. The President couple loved these chubby sugar pancakes so much that they asked for the recipe. Elizabeth promised – and later sent a letter to Eisenhower with a description and comments, from which it was immediately apparent that she had prepared them (this letter is kept in the National Archives of Great Britain).

“The recipe is designed for 16 people, but when there are fewer guests, I add less flour and milk and use all other ingredients in the ratio specified in the recipe,” writes Elizaveta. She also talks about replacing sugar with syrup: “I tried replacing icing sugar with golden syrup” (thick syrup from sugar cane or sugar beet – approx. ed.) and molasses – this also turns out well. Or one more cooking tip: “The mixture should be whisked well and not set aside for long before cooking.”

Queen Buns according to Elizabeth’s recipe

For 16 servings:
4 glasses of flour
4 tablespoons of granulated sugar
2 cups of milk
2 eggs,
2 teaspoons of soda,
3 teaspoons of cream of tartar (cream of tartar soda can be replaced with 5 teaspoons of baking soda),
2 tablespoons of melted butter.
Cooking method
- Whisk together the eggs, sugar and 1 cup of milk.
- Pour the flour into the mixture, whisk, gradually adding the remaining milk if necessary.
- Mix baking soda and cream of tartar and add to the mix (or add baking soda to the mix).
- Pour the melted butter there.
- Cook in a hot pan like pancakes.
