Chef Andrey Zhdanov has many original recipes with faces in the store. Check it out for yourself – here are some excerpts from the seasonal menu. As an appetizer, the restaurant offers a salad with chanterelles, shrimp and honey mustard dressing: as it turned out, seafood goes well with mushrooms with ginger. There are two Italian-style options in the main courses: risotto with chanterelle, with parmesan and dill jelly, and Casarecce with chanterelle and marinated tuna. The last one is probably the most fun to try!

Big Cafe “Dr. Zhivago”

The chef of the enterprise, Anton Kochura, added mushrooms to all possible portions – but the desserts did without them. For example, for breakfast with chanterelle, you can order an omelet with scrambled eggs, herb and Adyghe cheese, or a hearty omelet with potato gratin.
Among the appetizers there are unusual combinations: salad with chanterelle, smoked chicken and young peas, chanterelle and fresh vegetable salad with peaches (who would have thought!) or veal tartare with chanterelle and lightly salted cucumbers. Well, for hot – two options: fillet of sea bass with chanterelles, veal fillet with vegetables and lemon sour cream and fried potatoes and the same mushrooms.

“Sea of Ceretto”

The restaurant decided to adapt chanterelles near Moscow to Italian cuisine. Added to a creamy risotto with scallops and three types of oil – truffles, olives and garlic. And with homemade tagliatelle pasta with fresh spinach and truffle oil. Of course, none of these dishes can do without parmesan: mushrooms and cheese complement each other perfectly.

Alexander Anoshkin, chef of the restaurant in the residential complex “Symbol” (Lefortovo), believes that chanterelles are best combined with cheeses, potatoes, herbs and eggs. That’s why the restaurant’s special menu includes chanterelle salad, boiled egg and sour cream with black salt, chanterelles, burrata and pasta with creamy truffle sauce, chanterelle risotto, and is also served with stracciatella and baked mini potatoes.

There are very unusual positions in the special menu of the second half of summer. In ribeye tataki with ginger sherry sauce, the taste of chanterelles is complemented by the sour taste of sherry. Duck with mashed cauliflower, tonkatsu sauce, and chanterelles wonderfully combines spice and mild sweetness. Gnocchi with chanterelle and taleggio sauce lends a familiar twist to a familiar dish. The main hit of the seasonal menu is greccotto with asparagus, chanterelles and pecorino.

As an appetizer, get a mixed salad with fried chanterelles, Camembert cheese, pine nuts and Nicoise dressing. So, order khinkali with creamy chanterelles and greens stuffing, homemade lagman with chanterelles with truffle sauce, or veal stroganoff with chunks of beef and mushrooms on a fluffy pillow of mashed potatoes.

If you find yourself here, be sure to try the local delicacy – a giant grilled bruschetta made from your own bread. It is made with stracciatella and chanterelles sprinkled with sage oil. Maybe it will be enough for a hearty snack!

Another place for pastries and mushroom lovers. The restaurant’s brand chef, Timofei Sulima, added chanterelle biscuits to the menu. It is prepared on pastry and topped with zucchini, Parmesan and Camembert lightly cooked with spices. Before serving, fried chanterelles are placed on top in a creamy emulsion and mushroom powder with garlic oil, then sprinkled with grated Parmesan. Bomb!
There is also a more classic version – homemade pasta with chanterelles under mushroom sauce with stracciatella.
