Chef Alexander Chemakin decided to diversify the classic gazpacho with melon. It is prepared from fresh tomatoes with the addition of fragrant bell pepper, cucumber, basil and olive oil. The chefs of the chain’s enterprises, headed by Khatuna Kolbaya, invented a dish and a drink with melon, both in the Georgian style. As a snack, melon is mixed with spicy basturma and blackberry tkemali. As you can see, melon + tkemali = a combination that you can safely try in your daily life.

In the new Mediterranean restaurant that opened in the place where I love the bar in Shabolovka, they immediately decided to buy seasonal products and added melon to the scallop shell. But it’s not just a melon: it was previously marinated in ginger yuzu juice. The scallops are fresh but complemented by mango-wasabi sauce, lemongrass, lime juice, and tarragon oil. Yes, and decorated with fresh raspberries and flowers. Beauty!

All sherbets and ice creams in the business are handmade and prepared with minimum sugar in the restaurant’s kitchen. There are many seasonal among them, but right now we suggest you watch out for the amazing melon and bacon sorbet. Although the bacon in the sherbet has a secondary role, but what: it is responsible for the saltiness, which makes the taste of the dessert much more voluminous.
