The very simple recipe of the vegetable tian to change the traditional ratatouille

Market stalls are decked out in the dazzling colors of our beloved summer vegetables, but how can we prepare them as an alternative to good old ratatouille?

Here is the recipe for vegetable tian: in addition to being very simple to prepare, it avoids the hassle of cutting vegetables into squares.

Ingredients for a very simple vegetable tian for 4 people:

  • 3 courgettes, one of which is yellow for even more pep
  • 3 tomatoes
  • 1 red pepper
  • 1 eggplant
  • 1 onion
  • 4 cloves of garlic
  • Olive oil
  • Thyme and/or rosemary
  • salt
  • Pepper
  • Love (what else?)

Steps to make a vegetable tian easily

After washing the vegetables, peel and roughly chop the onion and garlic. Then peel the pepper with a knife to peel the tomato. I personally use the Victorinox brand and I admit that it has revolutionized the task of peeling for the whole family.

Dice the pepper, mix it with the onion and garlic, drizzle everything with a spoonful of oil and set aside.


Peel the aubergines and cut them into fairly thin slices, do the same with the courgettes and tomatoes if you want, without using the potato peeler.

In a baking dish, arrange the slices alternately with more or less regularity depending on your mood, pour and distribute the onion/pepper mixture over the vegetables.

For the more greedy, add more olive oil, otherwise put a little water on the bottom of the dish, add thyme, rosemary or other herbs that smell of Provence. Salt and pepper to your liking and put the dish in the oven thermostatically controlled at 180 degrees for 1 hour.

Barbecue variant: if like me you have a barbecue champion under your roof, entrust him with this recipe, cooking can also be done on the barbecue. And there you just have to enjoy a ray of sunshine, with your feet fanned out, before tasting!
