Abundant and satisfying, leek tart is a winter classic which always finds its audience. Whether you want to make your own dough or buy it ready-made, here’s everything you need to know to make a delicious one Leek tart.
ingredients
For the dough
- 1 egg
- 125 g of butter
- 250 g of flour
- 1 pinch of salt
- 1 pinch of pepper
- Herbs de Provence (to your taste)
(Otherwise you can also buy ready-made shortcrust pastry or even unsalted shortcrust pastry).
For the stuffing
- 4 leeks
- 1 stick of 12% liquid cream.
- 1 egg
- Salt, pepper, nutmeg (depending on taste).

The leek tart recipe
For the dough
- Leave the butter at room temperature. Cut it into pieces and put it in a salad bowl.
- Add the egg and mix.
- Gradually add the flour to the mixture.
- Salt, pepper and add a little herbes de Provence according to your taste.
- Once the mixture is smooth, form a ball with the dough and let it rest covered for 1 hour in the fridge.
- Using a rolling pin, roll out the dough to a thickness of approximately 50 mm. Transfer it into a tart mold, previously wrapped in baking paper. Prick the dough with a fork. Cook for 5 minutes at 200°C. Then take it out of the oven to pour in the filling.
For the stuffing
- Wash the leeks, remove the green part and then cut them into wedges.
- Put two tablespoons of olive oil in a pan, add the leeks cut into pieces.
- Once cooked, add salt, pepper and nutmeg.
- Pour a stick of cream, an egg, salt, pepper and nutmeg into a salad bowl and mix. Add the leeks.
- Pour the mixture into the shortcrust pastry and bake everything at 200°C for 25 minutes.
