Not only in summer can you enjoy salads. Even in winter, eating some vegetables can be good for you, especially after a hearty meal (by the way, have you tried raclette toasts?). The advantage of this variant with kale, bulgur, walnuts and feta is that it can be enjoyed both hot and cold.
The ingredients for the kale, bulgur and feta salad (for 2 people)
- 4 or 5 sprigs of kale
- 160 g of bulgur
- 1 red onion
- 100 g of feta
- 5 or 6 chopped walnuts
- 1 handful dried cranberries (optional
For the vinaigrette
- 6 tablespoons walnut oil (or olive, hazelnut, etc.)
- 4 tablespoons of cider vinegar
- 1 tablespoon honey
- Salt and pepper
Kale, bulgur and feta salad recipe
- Start by preparing the vinaigrette by mixing the oil, vinegar and honey. Add salt and pepper to your liking and then set aside.
- Cook the bulgur according to package directions. Drain and reserve.
- Wash the kale and blanch it for 5 minutes in boiling water. Reserve.
- Slice the onion, crumble the feta and cut the cooked kale into strips.
- In a salad bowl, mix the bulgur, kale, chopped onion, feta, walnuts and cranberries. Add the vinaigrette, mix well and enjoy immediately. Enjoy your meal !
