Originally from Liguria in northwest Italy, pesto is traditionally made with basil leaves. But you can exchange them for spinach leaves or, if you’re anti-waste, celery, carrot or radish tops. Very easy to make, it can decorate a homemade pizza, a toast with mozzarella, be used as a sauce or, more simply, a dish of linguine al dente.
New spinach pesto ingredients (for 4 people)
- 100 g of new spinach
- 50 g of pine nuts
- 70 g grated parmesan
- 1 clove of garlic
- 15 cl of olive oil
- salt
And of course the linguine (count 100 g of raw pasta per person).

Baby spinach pesto recipe
- Start by washing and turning the spinach leaves.
- In a blender (or mortar, if you’re a pesto purist), blend the baby spinach and garlic clove.
- Once the mixture is smooth, add the pine nuts and salt, mix again.
- Finally, add the Parmesan and olive oil, stirring until smooth.
You can absolutely make pesto while cooking the linguine following the directions on the package. Once cooked, add the pesto, mix well and enjoy immediately.
You can store this homemade pesto in a tightly closed glass jar. for a week, putting it in the refrigerator.
