First we chop the onion in juliana and fry it in a casserole with some EVOO. If we want, we can add a peeled clove of garlic. We boil the onion, but we cook it on low heat so that it does not get too colorful.

Chop the zucchini with their skins (washed well) and peel the potatoes and cut them into irregular pieces. When the onion is ready, we will add the chopped zucchini and potatoes to the casserole. We will fry the mixture for about ten minutes. Optionally, we can peel the zucchini, but the final cream will be a lighter color.
After this time, we will add the vegetable broth and let the mixture cook for another 20 minutes. After everything is ready, we will crush it with a blender – we can also pass the cream through the potato mill-.

Once we have our stew, we’ll put it back in the stew in case we need to season it with salt and pepper. At this point, this is where we will add the liquid cream in order to achieve a creamy texture (not puree style). Cook for another five minutes and serve.

There are many ways to accompany this pumpkin cream.
