At first glance, it is difficult to surprise Konstantin Ivlev with anything. He has tried many things in his life – from exquisite French delicacies to insects and offal. But there is still one delicacy that the eminent chef can always eat.
We are talking about Bishtak eggplants. Any housewife can prepare them. After all, the dish consists of simple and familiar ingredients:
- eggplant – 2 pcs.;
- onions – 1 piece;
- garlic – 4 cloves;
- vegetable oil;
- parsley;
- tomatoes – 2 pcs.;
- feta cheese – 100 g.
Pour vegetable oil into a frying pan and add finely chopped onion. Don’t fry it too much so that it becomes transparent. Finely chop the greens and garlic and add to the onion. Cut the tomatoes into cubes, place them in a colander and wait until the water drains.
Then you need to remove the pan from the heat and add the tomatoes. Mix everything thoroughly. Add feta cheese. The filling is ready.
Eggplants must be grilled in advance. Remove the pulp with a spoon and chop it finely. Place it in an even layer on a plate. Add filling on top. You can eat.
