Avocado green salad at Remy is one of the ones that set the green salad trend in the capital. And all because it’s also really filling, healthy and varied: here you can find regular kale, broccoli, cucumber, green peas, edamame beans and mini spinach arugula. And of course avocado. The salad here is disguised as a green bowl. It’s a real bombshell: it consists of green apple, broccoli, cucumber and zucchini slices, a mix of lettuce and spinach, young radishes and carrots, along with leaves, edamame beans, celery greens, asparagus, avocado, soybean sprouts, and kale. Dressing – pistachio, but you can replace it with balsamic olive oil.

The restaurant’s chef, Ilya Karpaev, rounds out the salad’s main ingredients – broccoli, mini-spinach, edamame beans, cucumber and young green peas – with fresh tarragon and guacamole. And flavored with round miniature grains of fermented granular cottage cheese. A complex wasabi dressing with Abkhaz lemon juice, soy sauce, radish juice and ginger juice will definitely set this salad apart from the rest.
