New gastronomic season at Central House of Writers’ restaurant
Chef Fyodor Verin took a gastronomic look at the enchanting beauty of autumn, combining unusual flavor combinations and creating seasonal dishes.
For starters, they offer two salads, each with a bright combination of fall flavors, alongside a creamy cream of soft goat cheese baked beets, grapes, pickled plums, and roasted hazelnuts. In the first salad, warm fig flower honey is mixed with stracciatella, orange slices, arugula, fresh raspberries and sherry dressing. In the second, the veal tongue is served with lightly salted cucumbers, spinach, arugula, roasted ramiro peppers and pickled mushrooms.
Chef Verin simultaneously introduces five new items in main courses. Fans of one of the most seasonal ingredients – mushrooms – are waiting for frying with onions, herbs, young boiled potatoes and fragrant butter. Fans of ravioli are offered an author’s variation, in which the dough is kneaded with pumpkin and boiled lamb casserole with vegetables is placed inside.
