To keep going and not find yourself short of fusilli at the next ray of sunshine, we give you our recipe From Pasta Salad In Italianto be carefully kept in your folder entitled “Madmoizelle’s best recipes” (and there are many).
The ingredients of the Italian pasta recipe (for 4 people)
- 400 g pasta (preferably fusilli or penne)
- 100 g of candied tomatoes
- 150 g of cherry tomatoes
- 150 g of mozzarella
- 3 spring onions
- A handful of rocket leaves
- 4 tablespoons of olive oil
- 1 tablespoon balsamic vinegar (or lemon juice)
- Salt and pepper

Italian pasta salad recipe
- Start by cooking the pasta following the directions on the package. Drain and set aside to cool.
- Cut the cherry tomatoes in half, slice the spring onions. Reserve in a salad bowl.
- Add the candied cherry tomatoes and the mozzarella balls. Season with olive oil and balsamic vinegar (or lemon juice), salt and pepper.
- When your pasta has cooled, add it to the preparation. Mix well and adjust seasoning if necessary. Sprinkle with arugula leaves.
- This salad is best enjoyed fresh. This is a vegetarian version, but you can add raw ham or white ham cut into thin strips.
