Potatoes in a jacket (and not in a dressing gown, as I believed until late in life) are potatoes cooked in the oven, in the microwave, or even on the barbecue or in the fireplace, most often wrapped in aluminum foil or baking paper.
Quick and easy to prepare, delicious with salad, jacket potatoes are available according to your wishes. Here’s one version cheese for more goodness.
Ingredients for 4 people)
- 4 large potatoes
- 4 tablespoons thick crème fraîche
- A log of goat’s cheese (or whatever cheese you like)
- A bag of grated Emmental
- A few sprigs of chopped chives (optional)
- Salt and pepper mill
The recipe for potatoes stuffed with cheese
- Start by cooking the potatoes in salted water. After about twenty minutes, prick them with the tip of a knife to check if they are cooked. If they are, remove them from the water and let them cool.
- When they are warm, cut them lengthwise and carefully pick them up using a teaspoon.
- Mix the potato pulp with a spoonful of crème fraîche, a handful of grated Emmental cheese, salt, pepper and chopped chives. Reinsert the pulp inside the potato, which you will then cover with a slice of goat’s cheese log.
- Bake at 2OO°C for 15 minutes and enjoy immediately.
