For lazy Sunday brunches, here is the easy but healthy and above all high-protein recipe for omelette with courgettes and fresh goat’s cheese.

If you’re a little tired of eating the usual scrambled eggs or the classic omelette, here’s a recipe that will make you want to have brunch again.

The ingredients for the recipe

  • 8 fresh eggs
  • 150 g of fresh goat’s cheese
  • 100 g of courgettes
  • Half a carton of 12% fat liquid cream
  • 1 tablespoon olive oil
  • Garlic
  • Parsley
  • salt
  • Pepper

The recipe step by step

Step no. 1: Finely grate your courgettes and chop the flat leaf parsley.

Step no. 2: In a pan, brown the courgettes with oil, salt, pepper and parsley for a few minutes.


Step no. 3: Pour the eggs and milk into a salad bowl and beat everything together. Then add the cooked courgettes. Add a little more salt and pepper.

Step no. 4: Pour the mixture into a hot and previously greased pan and cover (this way you won’t have to turn it).

Step no. 5: Once cooked to your liking, add the fresh goat’s cheese (the amount is up to you) and cover for another minute (just until it melts).

Step no. 6: Serve !
