Typically Spanish, tortilla de patatas is a popular dish made with onions and potatoes that is usually eaten cold, cut into tapas-style pieces.
Perfect for an aperitif, the Spanish tortilla can save you a lot of time even in the evening since, in addition to being ready in no time, it only requires ingredients from the bottom of the fridge and from the sideboard.
Another great advantage: since it contains only potatoes, your children certainly won’t hesitate to eat it (but you can still hide a few tomatoes or peppers in it, with ease).

The quick potato tortilla recipe
Ingredients for the potato tortilla (for 2 people)
- 4 large potatoes
- 6 eggs
- 1 onion
- 1 pinch of smoked paprika
- 1 pinch of Espelette pepper
- Salt, ground pepper
- 1 drizzle of olive oil
Potato tortilla recipe
- Peel and cut the potatoes into thin slices
- Chop the onion
- In a salad bowl, beat the eggs into an omelet and add the spices.
- In a hot skillet, saute the chopped onion until translucent.
- Then add the potatoes and sauté until browned.
- Finally add the beaten eggs in an omelette to the potatoes and onion. Lower the heat and cover. Cook over low heat for 3 minutes, until the eggs become an omelet.
- Using a plate, flip the tortilla and cook for another 3 minutes on the other side.
- Once cooked, let the tortilla cool off the heat. You can serve it with a green salad or, Spanish-style, cut it into pieces for an aperitif.
