Perfect for a light and vegetarian dinner, this golden baked aubergine recipe won’t take away too muchfifteen minutes of preparation and about 25 minutes of cooking. The eggplant, in fact, is a vegetable that cooks quickly. Enough to save you long hours in the kitchen, for an easy, summery result that your friends will envy.
Baked eggplant ingredients (for 4 people)
- 2 eggplants
- 150 g of crumbled feta
- 6 tablespoons of olive oil
- Cumin powder
- thyme
- Salt and pepper

Recipe eggplant with feta and thyme
- Preheat the oven to 180°C.
- Rinse the aubergines. Remove the stem and cut them in half lengthwise. Using the tip of a knife, score the meat.
- Using a pastry brush, brush the meat with olive oil.
- Salt, pepper, sprinkle with cumin and thyme.
- Divide the crumbled feta among the 4 eggplant halves.
- Add a last drizzle of olive oil, before baking for 25 minutes on a baking tray covered with baking paper.
- The aubergines are ready when they are golden brown and tender.
Serve immediately, accompanied by a Greek yogurt sauce, lemon and garlic cloves.
