You eagerly awaited them, here they are again: the very first tomatoes of the season are back on the market stalls.
What better way to celebrate this novelty, which smacks of the imminent return of summer, than preparing them in salads?
We therefore present the guacamole salad, made with all the ingredients present in the Mexican culinary preparation. As colorful as it is easy to make, it can be eaten as it is, served in fajitas or even as an aperitif dish with tortilla chips.
Guacamole salad ingredients (for 4 people)
- 4 ripe avocados
- 2 nice tomatoes
- 1 small red or green chili (or a few drops of Tabasco)
- 2 fresh white onions
- ½ bunch of fresh coriander
- The juice of a squeezed lemon
- 2 tablespoons of olive oil
- Salt, ground pepper
Guacamole salad recipe
- Start by peeling the avocados, then cut the flesh into small cubes.
- In a saucepan of boiling water, immerse the tomatoes for 30 seconds to “monde”, i.e. remove the skin. Once peeled, run the tomatoes for another 30 seconds under cold water to cool them and cut them into cubes.
- Cut the pepper lengthwise, remove the seeds and chop finely.
- Chop the white onions and cilantro.
- In a salad bowl, mix all the ingredients, add the olive oil. Salt and pepper.
To be enjoyed very fresh, in fajitas or accompanied by corn chips as an aperitif. Enjoy your meal !
