We’ll start by separating the stems from both heads of broccoli, cutting off the thickest end of the ends and peeling them lightly. We’ll cut the thicker parts of the stems into not-so-thin sticks, leaving the smaller stems whole. We will separate the flowers into bite-sized bouquets.
Wash gently to release the result later. We will steam or microwave it for about 3-4 minutes to lightly whiten it. After cooking, we leave it to cool in a bowl placed on ice (the purpose is to prevent the broccoli from continuing to cook).

Whisk the yogurt, mustard, olive oil and spices in a bowl with a whisk. After taking the mixture, we add salt and pepper. We will mix it well and add it little by little so that it completely covers the broccoli.
Heat some EVOO on a non-stick grill, frying pan, or grill. We will add broccoli with a mixture of yogurt and mustard sauce and cook for about 7-10 minutes (we will stir occasionally during this time) on medium-high heat.

We’ll coat it with black cumin seeds and toasted almonds to give it a crispier touch. These last ingredients can optionally be replaced with sesame, pine nuts or poppy seeds.
How to accompany broccoli with yogurt and mustard?
This recipe is versatile as we can serve it as a main dish or side dish. According to our demands, if we want to combine it with another recipe, we may prefer some protein and a serving of rice, quinoa, whole wheat pasta or another grain. However, it also pairs well with grilled fish, fried chicken or eggs.
