We take clean and headless perch for cutting in the form of a butterfly. It is a very simple task if we have a good knife, but we can also ask the fisherman to prepare it for us. Remove the backing and dry thoroughly using absorbent kitchen paper on both sides.
We prepare a sauce with garlic and parsley along with olive oil. We will use this to moisten the plate by spreading a few drops with a kitchen brush. When the griddle is very hot, cook the sea bass (previously seasoned with salt and pepper), leaving the skin on, next to the meat.

We will cook for three minutes and carefully turn. We’ll add a little more sauce to the cooked meat and let the skin brown for another three minutes (approximately). Our goal is to be very crispy but not dry.
We carefully remove the sea bass and place them on a serving plate, put the sauce in a bowl and set it aside so that we can serve it as much as we want.
