Experts advise placing a single raw egg white into each compartment of an ice cube tray and freezing until solid. Once fully frozen, the egg white cubes should be transferred into a zip-top freezer bag or an airtight container for storage up to one year.

Freezing Yolks and Whole Eggs

Freezing egg yolks requires a different approach because unseasoned yolks turn into a hard, rubbery mass that becomes difficult to use in most recipes. To prevent this texture change, home cooks must mix a small amount of salt or sugar into the yolks prior to freezing. For savory dishes, the guide prescribes adding one-eighth of a teaspoon of salt for every four yolks, while sweet preparations require one and a half teaspoons of sugar for every four yolks.
