Textured soybeans have no flavor and are sold dehydrated, so we need to flavor it with other ingredients and hydrate it in a liquid before starting our recipe. If you are going to make Bolognese sauce, you can hydrate it while cooking.

To hydrate it we have to put it in a bowl with twice as much water at least 15 minutes before cooking† Keep in mind that when hydrated it swells a lot, almost three times its size. It is ideal to use the vegetable stock to flavor it. Once it’s hydrated, we pass it through a fine mesh strainer and let it drain for a few minutes to remove excess liquid and we’ll have it ready to make any recipe.
