Russian travel blogger Marina Ershova has sampled revolcado, a traditional dish made from pig offal, during a trip to Guatemala.

Ershova shared her culinary experience in a post on her personal blog on the Russian content platform Dzen, describing her initial hesitation before trying the local meal.
Preparation of revolcado
The traditional Guatemalan dish revolcado is prepared using the head, liver, and lungs of a pig. The meat is first boiled, then chopped, and added to a thick sauce made from tomatoes, peppers, onions, garlic, and spices.
Guatemala, a Central American nation located south of Mexico, features a traditional culinary heritage influenced by Mayan traditions and Spanish colonial history. Offal stews like revolcado have long served as staple dishes in traditional Guatemalan cooking, often prepared in local communities across the country.
Ershova admitted that the dish initially looked unappetizing when served, but she chose to taste it anyway. She explained that she had already set her mind on a gastronomic nightmare and mentally bade farewell to her stomach before taking her first bite.
Surprising flavor and local tradition
Despite her initial apprehension, Ershova found the dish to be surprisingly edible. She noted that the sauce was genuinely tasty, explaining that the spices did their job, the meat was soft, and the overall dish turned out thick and rich.
The traveler added that information about what revolcado is made of was better left for later. She concluded that while the dish looks terrible to foreign visitors, it is simply everyday food and a traditional dish that has been cooked in Guatemala for a long time.
