Andrey Kolodyazhny – the chef of the restaurant “LES” – a true gastrobotanist, creates a kitchen of flowers and herbs, often going out into nature and collecting the same herbs. The restaurant has a lot of interesting “base” ingredients on its menu, but we loved the fly agaric powder on the pasta with porcini mushrooms and morelli. In general, they say that the red fly agaric is difficult to die from, and its poisonous qualities are overrated. It has its advantages: in alternative medicine, fly agaric is considered an antidepressant and even a powerful antibiotic, the main thing is not to get carried away with microdosing.

Bears in Russia, of course, do not walk on the streets, but sometimes they meet in restaurants. Ceberever’s has game meatballs on the menu, and if venison doesn’t sound all that exotic, bear meat drives the fantasy crazy. The taste of the meat is sweet and non-greasy – not for everyone, but definitely worth a try once.

Frog meat is a teleport to exotic noisy Vietnam, not romantic France! Once in “Bik Kau” (an authentic restaurant in the Moscow settlements) you could even try soup with snakes, but for some reason it was canceled, only frogs remained in the “delicacy” section. However, there are a lot of them here in all forms – from dough to Cha La Lot Ek rolls in la lot leaves. If you manage to get through the sauces and seasonings and feel the flavor of the frog meat itself, you will definitely guess the tones of chicken, rabbit and something between lychee and rambutan inside.
