How to properly prepare New Year’s salads?

The new year is just around the corner, which means our favorite salads for a festive feast are on the way, too. That’s why we decided to share with you the most delicious recipes of our favorite dishes that appear on every New Year’s table.

Olivier

Ingredients (for 4 servings)

  • Potato (3 pieces)
  • Eggs (4 pieces)
  • Carrot (1 piece)
  • Mayonnaise (180 gr.)
  • Sausage (300 gr.)
  • Pickled cucumber (3 pieces)
  • Canned peas (200 gr.)

First, prepare all the ingredients. Boil the eggs well (about 10 minutes), boil the potatoes and carrots in salted water. Then cut them into medium-sized cubes; Do the same with the cucumbers, squeezing gently to remove excess juice. Also chop the sausages and boiled eggs and mix with the other ingredients. Then add the pickled peas, first drain the liquid from the jar, add salt to taste, season with mayonnaise and mix everything well. Ready!


salad dressing

Ingredients (for 4 servings)

  • Potato (2 pieces)
  • Beetroot (1 piece)
  • Carrot (1 piece)
  • Sauerkraut (150 gr.)
  • Pickled cucumber (2 pieces)
  • Dill and parsley (3 sprigs each)
  • Spring (1 piece)

After washing the potatoes, beets and carrots thoroughly, put them in a pot, cover them with water and cook them until their skins soften. After that, drain the water and let the vegetables cool. Drain the sauerkraut from the brine and squeeze gently. Then chop boiled carrots, peeled onions, beets and potatoes into small cubes. Shake off the pickled cucumber brine and chop finely. Place canned peas on a sieve and dry. Wash the greens, dry and chop finely. Then put all the chopped ingredients in a salad bowl, add sauerkraut and peas, mix gently. Sprinkle with herbs, season with unrefined sunflower oil and salt and mix well. Ready!


Squid and egg salad

Ingredients (for 4 servings)

  • Squid (550 gr.)
  • Eggs (2 pieces)
  • Onion and garlic to taste
  • Mayonnaise to taste
  • Spices to taste

Only use squid bellies, which should be boiled in boiling salted water for no more than seven minutes. After that cut them into thin rings or strips. Boil the eggs in advance, peel them, grate them on a coarse grater and put half on a plate. Apply a layer of mayonnaise on them. Then add squid and pepper to taste. Chop the onion into small cubes and/or grate the garlic on a fine grater to your preference. Add more mayonnaise, then add the remaining eggs. You can mix everything or leave it in layers. Ready!


Crab sticks, rice and corn salad

Ingredients (for 4 servings)

  • Rice (0.4 cup)
  • Crab sticks (10 pieces)
  • Eggs (3 pieces)
  • Cucumber (2 pieces)
  • Canned corn (200 gr.)
  • Sour cream and mayonnaise (2 tablespoons each)

Cook the rice according to instructions until it becomes fluffy. Hard boil the eggs – about 8-10 minutes after boiling. Cool in cold water, peel and cut into small cubes. Add to rice. Now cut the cucumbers and crab sticks by the same principle and add them to the other ingredients. Drain the canned corn and add it to the salad bowl. For the sauce, mix equal amounts of sour cream and mayonnaise in a small bowl, add salt and spices as desired. Pour the dressing over the salad and mix gently. Ready!


Herring under a fur coat

Ingredients (for 4 servings)

  • Eggs (2 pieces)
  • Potato (1 piece (large tuber))
  • Beetroot (3 pieces)
  • Carrots (200 gr.)
  • Lightly salted herring fillet (200 gr.)
  • Onion (100 gr.)
  • Apple cider vinegar (1 tablespoon)
  • Mayonnaise (150 gr.)
  • Spices to taste

Boil the eggs for 10 minutes, then cool under water. Wash the beets thoroughly with a brush, boil until soft (about 1.5 hours). Then let the beets cool. Repeat the same process with potatoes and carrots. Cut the herring fillet into small pieces and carefully remove all the bones. Peel the onion and cut it into small cubes. Place in a small bowl, pour in apple cider vinegar and let sit for 5 minutes, then squeeze gently. Then peel the cooled beets, potatoes and carrots, and then grate them on a coarse or medium grater, dividing them into three separate bowls. Peel the eggs and chop finely or grate on a coarse grater.

To prepare the salad, arrange the ingredients in layers on a flat plate in the following order: potatoes, carrots, herring, onions, beets and eggs. Season each layer with salt, pepper and mayonnaise. After that, put the salad in the refrigerator for 1 hour.
