New Year’s Eve recipe: what to prepare for the festive table

Every family has traditions of preparing the New Year’s table. Some start cooking in the morning, looking forward to a festive dinner, others gradually cut off Olivier in the evenings, when the “Irony of Fate” is already on TV. Some create an atmosphere of comfort and unity by cooking with the whole family, while others prefer to spend time relaxing by ordering ready-made meals.

Whatever the process of setting the table for the holiday, each of us has one goal – to please our family and friends with delicious dishes. To make it easier for you to impress your loved ones, we consulted professionals in the field for recipes. In anticipation of the holidays, we share our favorites: one for those who love the most seductive new products, and the second for fans of the classics. Take notes!


Mini rolls with bacon and roasted vegetables

  1. Remove seeds from red and yellow peppers and cut into 5 mm strips. Add finely chopped garlic, thyme, salt and olive oil. Stir, cook at 220 ° C for 4-5 minutes and then cool.
  2. Boil the green asparagus in salt water for 1-2 minutes and cool it in ice water (to preserve its color). Place on a paper towel to remove moisture. We cut it into 6-7 cm pieces at a 45 degree angle. If the base of the asparagus is rough, we cut it down to 2-3 cm.
  3. Place cooked vegetables (20 g) and asparagus (10 g) on ​​thin bacon slices and roll.
  4. Mix the ingredients for the glaze.
  5. Coat the rolls with glaze. Bake in an oven preheated to 200°C for 2-3 minutes. Decorate with a mix of flowers or greenery.

New Year’s chicken jellied meat

  1. Cut the chicken into pieces – legs, breast, back, wings – and place everything in a large skillet.
  2. Cut the carrots into circles. Peel the onion and cut it into quarters. Put it in a pot. Add bay leaf, black pepper and salt.
  3. Pour water into the pan (enough to barely cover the chicken). Cover with a lid and bring to a boil. Then remove the foam from the surface of the water and reduce the heat to minimum. Cook for three hours on low heat.
  4. Remove the chicken pieces from the pan and drain the broth. You can omit the onions, black pepper and bay leaves. The important thing is to preserve the carrots.
  5. Return the broth to the pan and add the chopped garlic. Bring to a boil, turn off the heat and let cool. Then strain the broth again to remove the garlic.
  6. Separate the chicken meat from the bones and transfer it to the pan. Add carrots and parsley sprigs.
  7. Fill the mold with broth and leave the future jellied meat on the table until it cools completely, and then put it in the refrigerator.
  8. Serve with mustard, horseradish or adjika.

However, if you do not have the energy to prepare the New Year’s table by the end of the year, we understand you and do not blame you.
