Pancake recipes for Maslenitsa that are easy to repeat at home

We have a seven-day survival day ahead of us in gluten-free conditions, namely Pancake Week. This year it will be celebrated between March 11-17, so we strongly recommend that you avoid dieting during this period. The risk of not being able to cope and falling into leadership is too great.

We have already told you where to find the most delicious and unusual pancakes in Moscow. But if you’re one of those people for whom it’s really hard to leave the house, we’ve come up with something more interesting.

We asked restaurant chefs to share their secret secrets, recipes for their own dishes that anyone can replicate at home.


Gluten-free pancakes with fruit, Egor Makarov (Buro.Tsum)

Pastry

Chicken eggs – 3 pcs.
Gluten-free flour – 100 g
Sugar – 50g
Butter – 20 g

Preparation

– Mix egg yolk, butter and flour.
– Beat the sugar and egg white separately. Combine both masses.
– Put the crepes in a piping bag and fry under the lid for two minutes on each side.

Cream 33% – 480 gr
Egg yolk – 96 g
Sugar – 60g
Vanilla pod, 1 pc. – 6g

Preparation

Cut the vanilla pod lengthwise with a knife and collect the seeds from the back. The capsule can be dried and used later.
Combine cream, egg yolks, sugar and vanilla dots in a saucepan.
Prepare an ice bath (water and ice) in advance.
Bring it to 82 degrees, stirring constantly with a whisk.
Cool as quickly as possible in an ice bath: Place the hemisphere on the ice at an angle. Cover with contact film.

Powdered sugar – 60 g
Cream cheese – 400 g

Crispy pancakes, Eduard Sorokovikov (Eno Bistro)

Pastry

Butter – 100 g
Milk – 500 ml
Sugar – 40 g
Salt – 2g
Eggs – 4 pcs.
Flour – 500 g

filling

Red caviar – 10 g
Sour cream – 5 g
Dill – to taste
Pickled red onion – 2 g

Preparation

Mix the pancake dough. First we need to prepare the greasy noise. To cook on low heat, you need to melt the butter and continue heating until it begins to fry – the whey should sink to the bottom and thicken. Bake until the cookie smell disappears, do not stir. Strain and let cool.

Mix milk and cooled noise. Then add sugar, salt, egg and sifted flour. Mix everything.

Bake the pancakes in a hot pan until cooked.

Cut circles from prepared pancakes. Heat the vegetable oil in a pan to 140 degrees and drop the pancake molds into the oil, pressing the middle with a spoon or other metal object to create a cup shape. Hold the spoon until it holds its shape, then remove it and place it on a paper towel.

We put fillings such as sour cream, pickled red onion and caviar into the prepared pancake cases. Garnish with dill if desired.


Poppy seed pancakes, Sergey Kuznetsov (Mo Friends & Dining)

Pastry

Eggs – 6 pieces.
Milk – 500 ml
Oil – 170 g
Water – 340 ml
Flour – 290 g
Salt –15g
Sugar – 80g

Cream

Boiled condensed milk – 50 g
Mascarpone cheese – 75 g

Poppy – 150 g
Milk – 150 ml
Honey – 100 g

Preparation

Mix eggs, milk, butter, water, sifted flour, salt and sugar in a bowl. Beat with a whisk. Fry the pancakes in vegetable oil for 1-1.5 minutes on each side.

Prepare the cream: Beat boiled condensed milk with mascarpone cheese with a blender and put in the refrigerator for 1-2 hours.

Fill the poppy seeds with water, boil and strain. We repeat the procedure three times. Then pour milk over the poppy seeds, boil again and let cool under the lid. Strain and mix with honey.

To serve, stack two crepes on top of each other, add the cream and roll into a tube. Place the poppy seed mixture on top.


Pancakes with lightly salted tuna, avocado and herbs, Dmitry Golenin, Sage

Pastry

Yeast – 3 g
Vegetable oil – 30 ml
Milk 3.2% – 200 ml
Wheat flour – 200 g
Sugar – 40g
Salt – 3 g
Eggs – 3 pieces.

To send

Tuna – 40 g
Salsa guacamole – 40 g
Zucchini strips – 15 g
Tomato – 40 g
Olive oil – 3 ml
Spinach – 15 g
Coriander – 5 g

Preparation

Mix all the ingredients and leave in a warm place for about half an hour until the dough rises.

Fry in a hot pan with vegetable oil on both sides.

Place pre-mashed avocado on the prepared pancakes.

Place lightly salted tuna or salmon, fresh tomatoes, spinach and cilantro.

Season everything with olive oil.
