The requirements for this food will be determined throughout the entire production chain, from the beginning of production to the moment of transportation and sale. The document will also take into account the norms of current international technical regulations, SanPiN and current practical developments.
The need to introduce GOST for shawarma is explained by the risks of mass poisoning and the general sanitary and epidemiological situation in public catering establishments. “We are talking about products that are in mass demand, so the main task is to offer consumers a dish that is not only delicious, but also safe.”
Roskoshestvo reported that the epidemiological risk of shawarma is increased. The fact is that the temperature difference between hot meat and cold vegetables, as well as the high humidity of the ingredients contribute to the rapid development of pathogenic microorganisms.
The department also cites its own investigation of 29 shawarma brands, and only one sample was found to be safe. In the summer of 2023, 53 people were poisoned by shawarma in a Moscow cafe. 42 of them required hospitalization.
