You might have guessed it, but we eat a lot of feta in our house. Whether it’s winter or summer, this Greek cheese often enhances the recipes I try, whether it’s baked eggplant, kale salad, or spinach quiche.
At the moment I'm also using feta to season a dish of pasta with courgettes, which has the great advantage of letting my children eat vegetables without complaining. I will share the recipe with you.
The ingredients for the courgette and feta pasta (for 4 people)
- 400 g farfalle (or other type of pasta)
- 3 courgettes
- 200 g of feta
- 3 tablespoons of olive oil
- 1 pinch of dried thyme (optional)
- Salt and pepper
The recipe for courgette and feta pasta
- Start by cutting the courgettes into thin strips, which you will then cut into quarters to obtain small vegetable triangles.
- Once the courgettes have been sliced, cook the pasta following the directions on the package.
- In a pan, brown the courgettes in olive oil over medium heat. Once the courgettes are golden, lower the heat and cover. Leave to cook for about ten minutes until the courgettes are soft.
- While the courgettes and pasta are cooking, cut the feta into cubes and add it to the courgettes, mix well and cover. Cook for another five minutes.
- When the pasta is cooked, drain it and add it to the feta and courgette mixture. Salt, pepper, add dried thyme to your liking. Mix and serve immediately.
