However, it is difficult to find gluten-free wraps in stores. But vegan content creator Alice Esmeralda recently shared a simple red lentil protein pancake recipe on her YouTube channel. Between a pancake and an omelette, it requires few ingredients and is gluten-free but rich in protein and fiber. And it’s so good that I no longer wait until I have leftovers in the fridge to garnish them: I specifically prepare some delicious trays with which to fill my piadinas to put in the lunchbox to take to the office at lunchtime, and that’s it. new culinary obsession.

Ingredients for Alice Esmeralda’s coral lentil wrap
For 5-6 pancakes you will need:
- 200 g of coral lentils (dry weight) to soak for at least 1 hour, ideally 8 hours (that is, overnight)
- 4 tablespoons of gluten-free brewer’s yeast (but if you tolerate it well, classic/dietary/malt brewer’s yeast does the job very well)
- 1 to 2 teaspoons of Kala Namak black salt for its sulphurous, egg-like taste (or classic white salt if you don’t have Kala Namak on hand, of course)
- 1 pinch of turmeric to make the preparation more colourful
- 2 tablespoons of neutral vegetable oil, such as sunflower (1 for preparation, the other for cooking)
- 20cl of water
- Salt and pepper to your liking
Steps to make coral lentil rolls from Alice Esmeralda
The recipe requires a minimum amount of advance preparation as the coral lentils must soak for at least 1 hour, ideally overnight, to increase their digestibility. Once soaked you can rinse them, then put them in the blender with the 20 cl of water, the brewer’s yeast, the spices, the spoonful of oil. Mix for a good minute until the consistency is very smooth.
You can then cook the preparation in a crepe maker or in a pan greased with oil to form rolls. You have to wait for the top part of the preparation to become opaque before turning it to let it cook on the other side too, then it’s ready! All you have to do is garnish with your favorite preparation!
