While einkorn recipes aren’t common, this one might delight your taste buds without sending your blood sugar skyrocketing. This ancient grain is low in gluten and contains many antioxidants. Rich in fiber, it stimulates intestinal transit, limits your appetite and, icing on the cake, regulate the cholesterol level in the blood… In short, it is a supercereal that is interesting to include in our recipes. Like this fennel salad, as healthy as it is delicious…
ingredients
To make this recipe you will need:
- 250 g of small spelled
- 4 spring onions
- 1 fennel
- 4 candied orange peels
- A handful of almonds
The recipe step by step
Step no. 1: Soak the spelled in cold water overnight to reduce the phytic acid content.
Step no. 2: The next day, drain it and cook it in boiling salted water. Once cooked, drain it again and keep it in a salad bowl.
Step no. 3: Wash and cut the fennel into small pieces. Add them to the small spelled.
Step no. 4: Wash and cut the spring onions into small pieces. Pour them into the salad bowl.
Step no. 5: Take a handful of almonds (depending on your taste). Cut the almonds and also pour them into the salad bowl.
Step no. 6: Finally cut the candied orange peels and add them to the mixture.
Step #7: Mix everything and pour the vinaigrette of your choice (we recommend the mixture of salt, pepper, mustard, olive oil and balsamic vinegar) to dress your salad.
Step no. 8: Enjoy!
