To change spaghetti tomato and basil or even classics bacon and egghere is the recipe for one of the most loved dishes in Italy: spaghetti alla puttanesca.
Necessary ingredients for spaghetti alla puttanesca
- 4 tablespoons of olive oil
- 2 cloves of garlic
- 5 anchovy fillets
- 2 teaspoons of capers
- 125 g of pitted black olives
- fresh parsley
- A whole can of peeled tomatoes
- Half a teaspoon of pepper
- 500 g of pasta of your choice (white or wholemeal)
The steps to make the spaghetti alla puttanesca recipe step by step
To start, pour 4 tablespoons of extra virgin olive oil into a pan.
Add the 2 finely chopped garlic cloves, the chilli pepper and the crushed anchovies. Sauté them over medium heat.
Then add the olives cut in 2 and the capers. Jump for a few minutes.
Pour the whole can of peeled tomatoes and mash the tomatoes with a potato masher. Season the sauce with coarse salt and pepper.
While the sauce is cooking over medium heat (don’t hesitate to stir it regularly to prevent it from sticking), boil a pot of water with coarse salt (you don’t need oil if you stir it regularly, your pasta won’t stick).
Chop some fresh parsley and add it to the sauce.
Remove the pasta from the water, drain it and keep a little of the cooking water in a glass or bowl.
Pour the pasta into the pan with the sauce and cooking water. Gently mix everything and it’s ready!
Ps: unlike the photo below, it is not recommended to add Parmesan or grated cheese in this recipe as it contains fish. You know everything ! Enjoy your meal.
