On Instagram it’s a bit like the star salad, the one that all Instagrammers post on their profile to show how much they know how to cook.
However, I promise, rainbow salad (or rainbow salad, if you speak the language of Shakespeare) is very simple to make for anyone with a paring knife and a peeler in the kitchen.
Composed of raw vegetables of all colors (hence its name), it can then be adapted to all tastes, whether you are vegetarian or not. We give you the basic recipe here, to which you can add a soft-boiled egg, grilled tofu or minced chicken.

The ingredients for the rainbow salad (for 2 people)
- ¼ chopped red cabbage
- 1 small carrot, cut into julienne strips
- 150 g cherry tomatoes, halved
- 2 small peppers (one yellow, one red), julienned
- 4 or 5 radishes, thinly sliced
- 1 avocado cut into thin strips
- 120 g of cooked quinoa
- ½ teaspoon black sesame seeds
For the vinaigrette
- 1 tablespoon of sriracha sauce
- 2 tablespoons of hummus
- 1/2 tablespoon of olive oil
- 1 tablespoon old-fashioned mustard
Mix everything with a whisk.
In two pretty bowls or in a salad bowl, divide the quinoa, then arrange the raw vegetables on top, a bit like for a bibimbap. Pour the vinaigrette over the raw vegetables and sprinkle with the toasted sesame seeds. Serve immediately.
