The express recipe of homemade gazpacho, for lazy evenings

Lazy to cook? No budget to sort through? We give you an idea for a simple, quick and delicious recipe to cook. This week we tackle homemade gazpacho, that cold Spanish soup that everyone loves.

Arrived directly from Spain, and more precisely from Andalusia, gazpacho (or gazpacho) is a tomato and pepper soup that we tend to buy a little too much in supermarkets. However, there’s nothing easier than making this recipe, perfect for hot days, at home. All you need are some fresh veggies, a blender, and 15 minutes of your time. Proof :

The ingredients of gazpacho express (for 2 people)

  • 500 g of ripe tomatoes
  • 500 g of red peppers
  • 1 half cucumber
  • 1 small red onion
  • 1 clove of garlic
  • 1 drizzle of olive oil
  • Salt and pepper

The recipe for express gazpacho

  • Wash and cut the tomatoes into cubes.
  • Prepare the pepper: cut it lengthwise, remove the seeds and the white inner part, then cut it into cubes.
  • Wash, peel and cut the half cucumber into cubes or rings.
  • Chop the onion and garlic clove.
  • Put all the ingredients in the bowl of the food processor, add a drizzle of olive oil and blend until smooth. If necessary, adjust the consistency by adding water.
  • Season with salt and pepper and refrigerate until the soup is very cold.
  • Just before serving, garnish the soup with basil or mint leaves and a drizzle of oil.

You can enjoy this gazpacho with garlic croutons and chopped vegetables (tomatoes, peppers, cucumbers, etc.). Enjoy your meal !
