A great classic for evenings when you really don’t feel like cooking, salty toast always has its small effect. Already because it is incredibly quick to cook, but also because it can be garnished with practically anything that happens to hand.
In this case, here’s a delicious and colorful version that requires only three ingredients to be successful: bread, an avocado and an egg. You won’t find it easier!

Ingredients for 2 avocado toasts
- 2 nice slices of country or sourdough bread
- 1 avocado
- 2 eggs
- 1 squeeze of lemon juice
- 1 dash of Tabasco (optional)
- A few pinches of pine nuts
- Salt and pepper to your taste
Preparation of sandwiches with avocado and soft-boiled eggs
- Cook the eggs in boiling water for 5 minutes. You can put a tablespoon of baking soda in water to peel them.
- After 5 minutes, plunge the eggs into ice water to stop the cooking. Otherwise you risk ending up with hard-boiled eggs!
- Toast the bread slices in a toaster or oven (5 minutes at 120°C is perfect).
- Peel the avocado and remove the stone. Cut each half avocado into thin slices and drizzle with lemon juice to prevent it from oxidizing.
- Arrange the cut avocado on the sandwiches. Peel the eggs, place them on the toast and cut them in half.
- Sprinkle with pine nuts, salt and pepper. Add a dash of tabasco if you like spicy food.
Serve immediately with a green salad or bowl of chilled soup.
