There are nights like this, where you don’t necessarily feel like cooking, but also don’t have the budget to order another burger and fries. Rather than complaining about your half-empty fridge and wondering if you’ll be eating buttered pasta again for a third time this week, we’ve got the solution: homemade falafel.
We promise, to make these chickpea patties to die for, you’ll only need a few ingredients from your cupboard and refrigerator, and they’ll be ready to enjoy in 30 minutes.

Ingredients for making falafel (for 4 people)
- 400 g of cooked and drained chickpeas (canned are fine)
- 2 minced garlic cloves
- 3 tablespoons of flour
- ¼ bunch flat leaf parsley, chopped
- ½ bunch fresh coriander, chopped
- Spices according to your taste: cumin, turmeric, sweet pepper…
- A pinch of salt
- Pepper according to your taste
- Sunflower oil (or another neutral oil that supports cooking well)
Preparing the falafels
- In a bowl put the chickpeas, flour, garlic and spices. With a fork (or a potato masher) mash everything until you get a not too fine consistency. Better to avoid the blender so as not to have a too sticky preparation.
- With your hands (which you can dust with flour to prevent them from sticking), then form balls of about 5 cm in diameter. You can add flour to the mixture if it sticks too much.
- In a very hot pan, pour the oil. Add the meatballs and brown them for about 5 minutes.
- Once cooked, remove the excess oil by placing them on absorbent paper.
Delicious hot or cold, accompanied by a green salad, these falafel can be served with a vegetarian Greek yogurt sauce with a little lemon juice, salt, olive oil, sesame tahini) and garlic. You can also enjoy them as an aperitif or in a sandwich.
