It’s the same thing every year. I enter the month of December tired, vowing to plan ahead for gifts and go easy on meals and parties and all the things they do my stomach has been hurting since the 28th of the month. You can imagine, I never get there and end up in a ball with a mixture of hangover, exhaustion and morale under my socks.
To rehydrate and put me in a good mood, This broth recipe works every time!
Ingredients of the special post-holiday vegetable broth (2 people)
- 2 carrots
- 2 leeks
- 2 onions
- 1 clove of garlic
- 2 leeks
- 1/2 celeriac
- Salt and pepper
- Aromatic herbs of your choice (parsley, thyme, bay leaf, etc.)
- Some cloves
Vegetable broth recipe
- Wash and cut the vegetables into pieces
- Heat the oil in a pan and fry the onions
- Add the carrots and garlic
- Add the leeks and celery, salt and pepper to your liking
- When the onions are browned and the mixture has returned, cover with 2 liters of water
- Bring to a boil, then lower the heat and simmer for about 45 minutes.
- Add the cloves and herbs of your choice, then leave to infuse for ten minutes
- Remove the vegetables (you can puree them to make soup!)
And presto, your broth is ready! You can drink it as is, or cook vermicelli, noodles, alphabet pasta… or whatever you want.
And good hangover!
