How to make smoked salmon tartare yogurt and avocado cream?

We start by chopping the smoked salmon (the better, the better the dish) into small pieces or even strips. we miss in bowl add salmon and finely chopped chives and capers, also chopped. Mix everything well and add the mustard, a pinch of freshly ground black pepper (with a pepper shaker like this one) and some extra virgin olive oil.

in another bowl whisking yoghurt with ripe avocado. If it’s not ripe enough, you can speed up the process with the ripening avocado trick we show in the video below.
Stir with a fork so that the avocado melts and after you get a nice cream, Season with salt, pepper, dill, a few drops of Tabasco sauce and a little oil.. Mix well and pass through a fine sieve to make the cream very fine.

Time to assemble the plate. While we can make it in a large bowl, it’s an appetizer if we serve it in separate glasses, so we put some tartar and yogurt cream on it. We garnish each glass with half-boiled quail eggs, some mullet eggs and leaves of our favorite herb, in which case it could be fresh thyme but chives.
