The first thing we’re going to do is what exactly makes this mousse so special: a chocolate ganache and marshmallow. Put the chopped chocolate clouds in a deep bowl for the microwave and heat for two minutes at maximum power. Then, the chocolate will melt with the cloudsMix until you get a homogeneous cream. If there are any remaining chocolate chips, we can microwave them again at 10-second intervals until the cream is smooth and lump-free.
At the moment it is important to allow the cream to temper out of the refrigerator for at least 45 minutes, until the heat dissipates and does not go down when mixed with whipped cream. There are two tricks to whipping cream: make it very cold (the bowl is also recommended to be cold) and whisk until stiff peaks, preventing it from curdling and turning into butter. We can use a stick blender like this one to always check how the cream is going.
