We’ll peel the shrimp and save the tails for later. Heat a tablespoon of extra-virgin olive oil in a pan to sauté the shrimp shells and heads for five minutes. Add the water and cook for another 10 minutes over medium heat. Strain this smoked through a fine-mesh strainer and set aside. Heat the rest of the oil in a saucepan and sauté the finely chopped onion with the carrots and garlic cloves. We fry for 15 minutes.
