“They opened a poke bowl next door.” I don’t know how many times we’ve heard (or said) this phrase over the past few years. And this this Hawaiian dish is so trendy that the places where it is served do not stop growing.
Now an Asian competitor has emerged, and more and more locals are betting on it, even those opened by internationally prestigious chefs like Dabiz Muñoz from Madrid.
The chef is avant-garde in its purest form, and anyone who has visited his three Michelin-starred restaurant knows this well. Gastronomic rock & roll, dynamism and desire, so much desire, something that permeates every dish.
That’s why we get excited every time we see a new project with his stamp, because everything he signs has a trace. Already done this with StreetXO and GoXO with delivery (give us amazing torrijas on Easter)and now wants to join the dumpling feverthe star product that we can find in new restaurants and is coming to replace the poké bowls trend that filled the streets a few years ago.
Dabiz Muñoz’s new restaurant RavioXO
lands in Madrid, inside El Corte Inglés de Castellana, on 16 May, pay homage to Asian cuisine with dumplings as heroes. As explained by the gastronomic experts at Directo al Paladar, “the bet, which has been reduced to eight different dishes, includes some of its successes such as rabbit and carrots, as well as new creations such as the marmitako nigiri dumpling”.
Dishes like Thai Galician octopus or Basque country house with mole de noiva will end up on the menu of a restaurant we don’t know much about, just this one. The dining room will be an open kitchen..
Already at Madrid Fusión, the chef explained that RavioXO will be “a concept around meatballs and steamed ravioli, a concept that has made a huge impact 15 years after opening DiverXO and has surpassed it over the years.” We see it in the restaurant’s first promotional video:
When the moment comes when we can savor the innovations from the most rogue chef in Madrid, we still have his sauces. aioli anyone brave) and the rest of their restaurants.
