It is prepared in a frying pan without contaminating anything else, it is very tasty and we can serve it as a single dish or with a nice salad (as we wish). It’s easy to make, the most important part is to prepare the potatoes in the oven, and when we’re almost there, we put the cod slices on top and let them cook.

To begin, we will cut the cod fillet into pieces of about 120 or 150 g each (if using fresh cod). If we prefer desalted cod, we don’t need to season it later. We take it apart for later.
Next, we’ll peel and slice the potatoes, arrange them on a baking sheet and sprinkle with salt and pepper. We will also add a few tablespoons of olive oil and mix well. If we want, we can chop an onion in thin julienne and add it.

Add some white wine to the mixture and bake until the potatoes are golden brown (in the oven preheated to 180º for 20 minutes). In the meantime, we will place the cod, skin side down, on the baking tray on top of the potatoes.
At this point in the recipe we will raise the oven temperature to 190ºC and leave it for five minutes. We will take advantage of the moment to organize or refried. For this reason, we slice the garlic and fry it in olive oil in a pan until it turns pink. We will turn off the stove, remove almost all the oil and leave only a tablespoon to pour over the cod slices.

To finish, sprinkle with black pepper and let the fish cook for another five minutes. We will take the fish out of the oven, reserve it, serve the potatoes on a plate and decorate it with green shoots, placing slices on it. It’s time to taste this culinary masterpiece.
What to accompany the cod with baked potatoes?
A simple (and nice) green salad can accompany this dish by bringing the built-in side dish. However, it wouldn’t hurt to accompany this dish with a nice loaf of bread from an artisan bakery.
