Navy-style pasta guide outlines 10 traditional recipes

Russian publication Lenta.ru published a guide outlining 10 recipes for navy-style pasta, tracing the classic maritime staple from Soviet kitchens to modern air fryers.

Food writer Aleksandra Razumovskaya compiled the step-by-step methods, explaining how home cooks can prepare the dish on stovetops, in campfire cauldrons, inside ovens, and using air fryers.

The hearty pasta and meat combination originally earned its name from naval sailors who depended on simple, accessible provisions during voyages at sea. The dish subsequently developed into a staple of twentieth-century Soviet home cooking and military mess halls.

Soviet classic with minced meat

The traditional Soviet formulation remains the most widespread version of the dish, relying entirely on onions, ground meat, and dry pasta without extra vegetables or complex spice blends.

The preparation calls for 600 grams of ground beef, pork, or a blended mince, 250 grams of dry ridged pasta, two medium onions, one tablespoon of salt, half a teaspoon of ground black pepper, and 50 milliliters of refined sunflower oil.

Diced onions are cooked in hot oil over high heat for three minutes until lightly golden before adding the meat, which cooks alongside the onions for 15 minutes to brown thoroughly and develop tenderness. The pasta boils in salted water for roughly eight minutes until softer than al dente, after which cooks drain the noodles, stir them into the meat, and cover the pan on low heat for two minutes to blend the flavors.

Chicken, egg and canned beef variations

A second variation incorporates whole eggs and chicken mince to bind the ingredients and create a softer, more nutritious texture.

This recipe requires 300 grams of ground chicken, 200 grams of pasta, one medium onion, two eggs, two tablespoons of vegetable oil, salt, and ground black pepper. Diced onion cooks in oil for three minutes before the chicken is added and fried for five to seven minutes, with cooks using a spatula to break up clumps until the meat browns lightly.

After seasoning with salt and pepper and simmering on low heat for three minutes, cooks combine the meat with pasta boiled for nine minutes. The pasta is drained without rinsing to preserve surface starches, after which two eggs are beaten into the warm meat, mixed with the noodles, and cooked on medium heat for two minutes until set.

A rapid adaptation replaces fresh mince with canned stewed beef, known as tushenka, paired with aromatic vegetables.

The dish uses 200 grams of pasta, one 325-gram can of stewed beef, an onion, a carrot, two garlic cloves, two bay leaves, five tablespoons of vegetable oil, three sprigs of green onions, and optional chili pepper and meat seasonings. Diced onion and carrot cook in oil for three minutes before the canned beef is shredded along its fibers and added to the skillet with garlic, chili, and spices.

Pasta boiled to an al dente stage is folded into the beef mixture, with cooks recommended to add a ladle of starchy pasta water if the pan seems dry, before finishing with chopped green onions.

Air fryer and one-pan skillet recipes

The guide highlighted an air fryer recipe as the simplest approach because the entire meal cooks in a single basket without pre-boiling the noodles.

The dish combines 200 grams of dry pasta, 400 grams of minced meat, 250 milliliters of pureed tomatoes, 250 to 400 milliliters of water, shredded mozzarella, salt, pepper, and spices such as paprika or dried garlic. Dry pasta forms an even base layer in the appliance bowl, covered by crumbled meat, seasonings, tomato puree, and water.

After stirring so the noodles are fully submerged, the dish cooks at 200 degrees Celsius until the pasta softens and the sauce reduces, with mozzarella added during the final minutes to melt into a crust.

A separate one-pan skillet recipe prepares the noodles directly inside a tomato sauce base to maximize flavor absorption.

Ingredients include 500 grams of minced meat, 350 grams of pasta, 200 grams of onion, 150 grams of sweet bell pepper, one head of garlic, 150 milliliters of tomato puree, and 800 milliliters of broth or water, along with paprika, black pepper, and dill. Cooks soften the onion and brown the ground meat before adding sliced bell pepper, garlic, tomato puree, seasonings, and broth.

Once boiling, the dry pasta is added directly to the liquid, covered with a lid, and simmered for 10 to 12 minutes with occasional stirring before cooks stir in fresh dill and rest the pan for two minutes.

Baked casserole and campfire cooking

A baked variation transforms navy-style pasta into an oven casserole layered with double-ground meat and breadcrumbs.

The dish requires 250 grams of boiled pasta or noodles, 250 grams of beef, lamb, or pork, one egg, half a teaspoon of salt, two tablespoons of breadcrumbs, one tablespoon of butter or oil, and two tablespoons of broth or reserved cooking water. Ground meat is fried on low heat, passed through a meat grinder a second time, and mixed with broth and optional fried onions.

Cooks stir raw egg and salt into the boiled pasta, spread half across a greased baking pan, layer the prepared meat over it, cover with the remaining noodles, and top with breadcrumbs and melted fat before baking 15 to 20 minutes until crisp.

For outdoor settings, a basic campfire recipe prepares the dish inside a cast-iron cauldron, known as a kazan.

The recipe uses 600 grams of minced meat, 300 grams of pasta, one onion, 60 grams of vegetable oil, and 600 milliliters of water. Cooks fry chopped onion in oil inside the heated cauldron, add the meat for seven to 10 minutes, stir in dry pasta, and pour in hot water gradually, covering the pot for eight to 10 minutes until the pasta swells and softens.

A richer campfire version suited for large gatherings incorporates beef chunks and garden vegetables simmered over open coals.

The ingredients include 700 grams of beef pulp, 400 grams of durum wheat pasta, two red sweet peppers, two carrots, two onions, 400 grams of canned chopped tomatoes, four garlic cloves, four tablespoons of oil, 800 milliliters of water, and 20 grams of fresh parsley. Sliced beef, onions, and carrots fry in the cauldron for 10 minutes, followed by peppers, garlic, and chopped tomatoes simmered for 10 minutes.

Dry pasta is stirred into the thickened sauce, covered with 600 milliliters of boiling water, and cooked under a lid until tender before resting with chopped parsley for five to 10 minutes.

Cream sauce and white fish variations

A poultry variation incorporates heavy cream and garlic-infused cooking oil for an everyday dinner alternative.

The recipe calls for 350 grams of ground chicken, 200 grams of pasta, 200 milliliters of 20 percent fat cream, one large garlic clove, three tablespoons of sunflower oil, a teaspoon of flour, and 10 grams of fresh parsley. A crushed garlic clove is browned in oil for one minute and discarded before frying the chicken mince for 10 minutes.

Cream is poured into the skillet and simmered for two to three minutes to thicken, using flour if the sauce remains thin, before folding in boiled pasta and fresh parsley.

An unconventional adaptation replaces red meat with poached white fish and broken spaghetti.

This version uses 500 grams of boneless white fish fillet, 200 grams of thick spaghetti broken into shorter segments, two onions, one large carrot, and bay leaves. The fish is gently poached in salted water for seven to eight minutes, cooled, and mashed with a fork along with several spoonfuls of cooking broth for moisture.

Cooks sauté sliced onions and grated carrots, combine them with the boiled broken spaghetti, stir in the mashed fish, and warm the ingredients together for five minutes before serving.

Pasta selection and cooking guidelines

Razumovskaya advised that selecting the proper noodle shape is critical for authentic navy-style pasta dishes.

Short pasta shapes crafted from durum wheat with textured or ridged surfaces, including elbows, shells, penne, and farfalle bows, perform best because their exterior grips the ground meat and sauce while resisting mushiness. Long spaghetti and thin vermicelli are unsuited for the dish because they do not mix evenly with minced meat and can disintegrate into a paste.

The guide established five essential rules for boiling pasta. Cooks must avoid adding oil to boiling water because it leaves an oily barrier that prevents sauce from adhering. Pasta requires generous water volume, needing at least one liter per 100 grams of dry noodles to prevent concentrated starches from causing sticking, with one teaspoon of salt added after boiling begins.

Pasta should be kept slightly undercooked at the al dente stage because it finishes cooking inside the hot pan with meat and sauce. Boiled noodles must never be rinsed under water, as rinsing strips away surface starch that binds the ingredients together.

Regarding meat selection, ground beef containing modest fat offers traditional flavor and juiciness, while beef and pork combinations provide balanced moisture. Turkey or chicken mince offers a lighter, tender option that cooks quickly, though it benefits from extra seasoning to offset its milder taste.
