Spoiled jam can be saved by removing the mold alongside a thick layer of fruit, but only if the preserve contains more than 60 percent sugar, according to a report by Polish lifestyle outlet Onet Kobieta.
For preserves prepared with lower sugar levels or formulated with artificial sweeteners, experts warn that the entire jar must be thrown away immediately to prevent health risks.
Sugar acts as a natural preservative in high concentrations by binding free water molecules, creating an osmotic environment that inhibits fungal growth and prevents deep mycelium penetration.
Although mold is deliberately used in the production of certain specialized cheeses and cured sausage products, its unwanted multiplication on everyday food items causes rapid spoilage.
The publication explained that mold reproduces through airborne spores that land on food surfaces. Once settled, these spores germinate and develop an extensive network of microscopic fungal threads known as mycelium.
While consumers usually only see a small fuzzy patch on the surface, a significantly larger portion of the organism penetrates deep inside the product. Certain mold strains produce harmful toxins, some of which are known carcinogens capable of causing severe long-term health damage.
Spore Penetration and Vulnerable Foods
Fungi thrive particularly well in warm and humid conditions. The softer and moister a food item is, the faster fungal growth spreads throughout its entire volume.
Experts warned that consumers should be especially cautious with soft fruits, compotes, and vegetables. Bread, grated cheese, and nuts are also highly susceptible to rapid contamination, meaning any item showing mold traces must be discarded straight away.
Mycotoxins produced by molds can contaminate high-moisture foods rapidly because liquid environments allow chemical compounds to diffuse easily beyond the visible mold mass.
Even when salvaging high-sugar jams, researchers noted that removing the surface layer does not guarantee complete safety. Fungal spores often remain suspended in the upper air space of the jar and adhere to the inside of the lid.
