To make this recipe you will need:

  • 3 leeks
  • 1.5 kg of pumpkin
  • 5 cloves of garlic
  • 50 g of butter
  • 1 chicken or vegetable stock cube (for vegetarians)
  • salt and pepper

The recipe for pumpkin and leek soup

Step 1 : Wash the leeks carefully and slice them.

Step no. 2: Peel the pumpkin and cut it into cubes.

Step no. 3: In a saucepan, melt the butter (without browning it) and add the sliced ​​leeks. Let them sweat for a few minutes, stirring so they don’t stick.

Step no. 4: Add the diced pumpkin, garlic, 1.5 liters of water and the bouillon cube of your choice (chicken or vegetarian). Boil the water.

Step #5 : Leave the mixture to cook for approximately 30-45 minutes over medium heat.

Step no. 6: Mix the vegetables with a little broth until you obtain a velvety consistency.
