Ingredients for the asparagus, pea and feta quiche
- 1 shortcrust pastry
- Fresh peas (30 pods) or 150 grams of frozen peas
- A bunch of fresh green asparagus
- A few stalks of chives
- half a yellow onion
- A clove of garlic
- 4 eggs
- 150 grams of feta
- 20cl of fresh cream or 20cl of soy cream
- Salt and pepper

- Cut off the ends of the asparagus. Steam them for 20 minutes or boil them for 10 minutes in a saucepan.
- If using fresh peas, shell them while the asparagus is cooking. Cook them for 10 minutes in a saucepan to the boil, not too long so that they keep their very green colour.
- Chop the onion and garlic. In a pan, brown them for a few minutes.
- Preheat the oven (ventilated heat) to 180°
- Roll out the shortcrust pastry in a cake tin. Prick the bottom with a fork and then set aside
- Cut the feta into small cubes
- In a bowl beat the eggs. Add the cream and mix everything together
- Add the feta, peas, onion and garlic to the mixture. add salt and pepper
- Pour the mixture on the tart
- Arrange the whole asparagus on the quiche all over the surface
- Bake for 30 to 40 minutes in the oven
