After whipping, we transfer it to the blender glass along with salt, vinegar or lemon juice and half of the oil.

The moment of truth comes through overcoming it. We place the hand mixer in it so that it touches the bottom of the glass and start whisking at low power. Beat without moving the mixer.. Once the mixture has emulsified and turned into a whitish cream, gently move it up and down and add the rest of the oil slowly (little by little). We keep whisking until mixed and voila, in less than 10 minutes the mayonnaise is ready.
