We start by washing and drying the zucchini well. After cleaning and drying, we will make the noodles – any option is suitable for us – thanks to the spiralizer, mandolin, manual cutter or toothed peeler.

We will take the zucchini noodles in a strainer, add a pinch of salt and remove them. We will let the water drain for about 15 minutes, during which time we will take advantage of creating the sauce by whisking all the ingredients in a bowl. Taste and adjust the amounts to taste.
We will chop the garlic very finely and fry it in a pan with a little EVOO, being careful not to burn it. Right after, we drain the zucchini well (lightly) and throw them into the pan.
