Adding almost no fat and enjoying its authentic flavor, this recipe is easy and quick to make. Also, the same recipe can be applied to other fish such as sea bass and corvina.

The first step will be to thoroughly clean and dry the bream – thereby reviewing the previous work of the fisherman. We will remove the head, tail and fins and season the inside with salt and pepper. We will make julienne with the selected vegetables and mix them by placing them in a silicone baking dish. Sprinkle some salt on them and add a tablespoon of extra virgin olive oil.

After making this mixture, we will place the fish in the box, but if we do not have such an accessory, we can make classic papillon with baking paper. To do this, we will put the fish and pieces of vegetables in it and close it like an envelope, hermetically closing it, giving several layers of paper.
When we put it in the microwave, we can cook the contents of our breast between 8 and 10 minutes, depending on the size of the sea bream. For a fish weighing approximately 600 g, 8 minutes at 800W is sufficient -before cutting-. This will cause the inside of the breast to start sweating and will release the steam that will cook the mixture, it will have the perfect texture and retain most of the nutrients. This cooking technique is light, easy and smooth.

When the cooking is finished, we will carefully remove the fish from the papillote, removing bones and skin to keep only the clean loins. We will serve them with their vegetables and flavor them with a few drops of olive oil.

How to accompany the sea bream to the papillota
