The first thing we will do for Andalusian tuna is to prepare the fish. We can ask our trusty fisherman to cut it into pieces as if we were going to make beef a la jardinera, or we can cut the tacos at home with a good knife if we have the whole piece.

Finely chop the onions and fry them in a pan with a little extra virgin olive oil. It is important to do it little by little, on low heat to caramelize.. When it starts to turn colour, add the thyme, bay leaf and sweet paprika, being careful not to burn the last one and make the food taste bitter.

Stir and add the vinegar, let it cook for another 10 minutes. Now it’s time to add the wine and let it lose its alcohol and the sauce begins to concentrate. After at least 30 minutes, add the tuna tacos. The trick to making them perfect is to cook them for two minutes on one side, then turn off the heat and turn them upside down. to finish cooking with the remaining heat.
