We can make the latter at home (Directo al Paladar has a very simple recipe), but they sell it in any supermarket if we don’t want to complicate our lives. Dabiz won’t be complicated and has created its own with fennel seeds, soy sauce, garlic, sesame oil, fresh ginger, red onion, mirin, sake, Pedro Ximénez, and maltose and cooked it for at least half an hour. low heat, until it subsides.
We will marinate the chicken leg fillets with this sauce for at least a few hours (we can leave it overnight for a stronger flavor).
After marinating, we put it on the charcoal to cook little by little and caramelized and lightly friedand while we cut the dessert into slices about two centimeters thick.
We put a pan with four or five cubes of butter and leave it on the fire until it melts and melts, two-sided toast. Now it’s time to put the sandwich together.
We put a lot of (a lot of) truffle mayonnaise on each of the toasted buns. In one we put the chicken with a slice of cheese and a thin slice of tomato, which we will add at the last moment of the grill, and in the other we put a nice layer of french fries to give it texture.
