MotoUmami: How can you make Rosalía and Dabiz Muñoz’s Japanese sandwich even if you don’t know how to cook?

We were thoroughly impressed by the news of a collaboration between Rosalia and Dabiz Muñoz. living room Since last week and the mystery has finally been solved.

In the kitchen of Dabiz Muñoz’s next restaurant, RavioXO, Rosalía herself cooked up the Madrid chef’s new craze, inspired by the Motomami album. Sandwich name changed to “MotoUmami”.

Rosalía x Dabiz Muñoz’s sandwich

As Dabiz himself explains, it’s a sandwich based on Japanese katsu sando with a “spongy” brioche bread (hello to another of the songs on the album, cake) and stuffed with a teriyaki chicken in homage to Rosalía’s most question-raising song since its release.

how to make sandwich

Difficulty: Easy
  • total time

first thing to have good brioche breadIt’s like a teriyaki sauce that we use for modern French toast we see in many restaurants. We can make the latter at home (Directo al Paladar has a very simple recipe), but they sell it in any supermarket if we don’t want to complicate our lives. Dabiz won’t be complicated and has created its own with fennel seeds, soy sauce, garlic, sesame oil, fresh ginger, red onion, mirin, sake, Pedro Ximénez, and maltose and cooked it for at least half an hour. low heat, until it subsides.

We will marinate the chicken leg fillets with this sauce for at least a few hours (we can leave it overnight for a stronger flavor).

After marinating, we put it on the charcoal to cook little by little and caramelized and lightly friedand while we cut the dessert into slices about two centimeters thick.

We put a pan with four or five cubes of butter and leave it on the fire until it melts and melts, two-sided toast. Now it’s time to put the sandwich together.

We put a lot of (a lot of) truffle mayonnaise on each of the toasted buns. In one we put the chicken with a slice of cheese and a thin slice of tomato, which we will add at the last moment of the grill, and in the other we put a nice layer of french fries to give it texture.

We combine the two parts we press to cut well, as Dabiz Muñoz does in the video. Once cut, add some more teriyaki sauce and bon appetit. A recipe with an abundance of both, which makes us want to know whether this is a one-time collaboration or the beginning of a great gastronomic friendship.
